For the 308, 328 line the guys at Nick's Forza Ferrari seem to do some really cool work with their engine rebuilds. I have read articles about their work and it seems they take what is already great, make it better and more reliable. I have always admired what they do. Do you guys know anyone who does similar work on 360s? more than just adding an exhaust system?

Depends on how long you want it to last. ;)

OP, also give a look into Nick's Forza Ferrari; I know they're kinda specialists with the 308 series of engines (4-liter 600+ hp N/A builds) but i'm sure that's not all they've built.

That was along my line of thought, if they can get 4 liters and 600 hp out of a 308 block imagine what could be done when starting with a 3.6 liter block. I did email him though and he said they had an engine tune coupled with a Capristo exhaust sytem with cat delete to add about 20hp but didn't mention any engine rebuilds for the 360. It just seems they really know their stuff as far as the 308/328 series and I'd love to see what they could do with the 360 series using those same techniques.
