Excellent thermometer - also look at getting the Smoke, which is the remote thermometer for both meat and grill temps. Ah okay, the way you phrased it I got a bit confused. I don't need to spend the money, but the one I was using crapped out already. So I've spent at least $30 if not more on several over the years, especially the last few. Figured it was worth getting something that lasts, fast and accurate.
Store was out of Briskets, must be a good sale. I picked up some steaks. Butcher shop was closed by the time I got there. Ended up taking out fish and chips. 2piece halibut and chips. $23 buck rip off, should have got sashimi instead.
I didn't look much but yesterday I did a quick search at being a butcher for a job since in looking to change careers. Lol

I bought the sambal at Kroger. The pepper pyramid challenge. Love it. We had a Thai restaurant like that, I made it to 6 before they went out of business. Not sure I could have gone much further on their scale. I think it was logarithmic. Try the Tabasco rocoto pepper sauce. It's not super hot, but has a very interesting spice profile...T
Gonna make chimichurri to go with the tri tip. Think I'll use 4 or 5 cloves of garlic, 2:1 ratio of parsley to cilantro (cilantro tend to overpower things imo), shallot, oregano, olive oil, red wine vinegar and debating on lime or lemon juice. Lime, unless you like things sour. In fact, with red wine vinegar in the mix, I'd go light on the acids. In general, acid is good to brighten things up and cut through the fattiness of foods, and tri tip is usually pretty lean unless it's got the fat cap still there. I'd use that recipe as a base, then add the acidic stuff a bit at a time at the end until it's got the flavor you like...T
