    I purchased a waffle maker a few months back, unforunately I have yet to make a great waffle. I've tried at least a 1/2 dozen waffle recipes and they are all quite average. So if any of you have a recipe you'd care to share, I'd sure appreciate it.

    Also if there are any special tricks or hints with regards to the waffle maker itself. Feel free to throw in your 0.02

    I'm interested in this also as I'd like to make a mean batch of chicken and waffles! Jeff, excellent choice on the waffle iron. One of the best available!

    no one....:( I found a Alton Brown recipe I'll try. I'll let you know how they turn out.

    Ingredients
    4 3/4 ounces all-purpose flour, approximately 1 cup
    4 3/4 ounces whole-wheat flour, approximately 1 cup
    1/2 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon salt
    3 tablespoons sugar
    3 whole eggs, beaten
    2 ounces unsalted butter, melted
    16 ounces buttermilk, room temperature
    Vegetable spray, for waffle iron
    Directions
    Preheat waffle iron according to manufacturer's directions.


    In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.


    Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

    The basic waffle recipe in "The Joy of Cooking". I add a little vanilla extract and am generous with the baking powder and conservative with the butter. Don't over beat the batter and let it rest for a few minutes before baking the waffles.

    I recommend Krusteze Belgian Waffle mix. Available at most super-markets.

    As other posters have suggested, let the mix sit for a few minutes (10+ for me) before pouring onto the iron. Your waffle iron may need to "season" up a bit from use before the waffles fall from the surface when done.

    I'll make it a point to drop by a Roscoe's next time I'm in L.A. for their waffles & chicken. A scoop of ice cream on a warm waffle isn't bad as a dessert.

    One thing you will note is the inconsistency from one day to the next. Water temp is a big factor. Don't over-mix either. Some turn-out light as a feather, other times, they are a bit heavy. Have fun! Waffles are my favorite comfort food.

    -Kevin, when you say water temp can make a difference, what do you recommend....hot, cold, warm, room?

    -Ross, what is the advantage to using a generous amount of baking powder?

    Agree about Krusteze but the secret is to add a 1/2 tsp of pure vanilla extract.

    Make some of your own! My Mom made Chicken & Waffles once every blue moon, just as long as it was a Wednesday night.

    Many moons later, we made the pilgrimage to Roscoe's - Hers was so much better, it was the equivalent of a 49-1 landslide election.

    Ostensibly to make them fluffier. Not sure if it really does or not but the waffles are always good. Use your own judgement, I like to experiment.

    I like to separate my whites from my yolks and beat the whites till they form peaks. Make the batter like you normally would (with the yolks) and then fold the whites in gently.

    My wife bought the pancake version of this stuff and it was awful! Stay away.
