    Took the next step in corn tortilla authenticity; busted out the mother in law's old-school comal. Think the comal is about 8".

    Got it rocket hot, lubed with a smidgen of bacon grease. Yummy.

    I had mine with carnitas. Wife had brisket.

    I’m doing a pork butt / shoulder tomorrow. It’s gonna smell really good around here!
    Plan to have in on by 8am.
    Then go for a drive after it’s done.

    Greek pizza, inspired by a little place we stumbled on in a small town to the north of the Metroplex. Wish I had some spicy Sicilian olives, but alas no. Feta, mozz, cucumber, diced tomato. Spices. Heck, forgot to put some banana peppers on. I'll be right back!

    Tragedy avoided!! Sprinkled on a bit of crushed red pepper in addition to the pickled banana peppers. Additionally, our first bounty from the garden. Oregano and spinach as a topping.

    Indeed. She's no longer a pup, but she's still a cutie. Wife's out running errands, so I've been babysitting her most of the day after my early morning run in the 911.

    It’s hard to acknowledge they’re of that age. Every day for ours seems a struggle but she always has a smile on!

    Just under 9,500 miles on the NSX. Quick errand today to John Deere for a part. Lots of thumbs-ups! Damn thing is a rocket.

    Maybe take some of the marinade - boil the s**t out of it to kill any nasties - then add some cumin, brown sugar, etc. to make it like a BBQ sauce? Then use that as a marinade/mop?

    How was UFC fight night with the family?!?

    Did leftovers too. Leftover pizza from the other night.

    This was some hot links we got from a small place near where we take drives in the country.
    Called Hess' Meat Market in Muenster. Wasn't very "hot" in spice, so I added some sliced serrano peppers. Red onions - thinly sliced - as well.

    Also, added a little crumbled cheddar to the mozzarella, as I thought that might be a good flavor match. Made the final deal a tad oily, but the taste was OK.
