Steaks done. Had the strip for lunch. Did a reverse sear with a bit of pecan thrown on the charcoal. Also making taco meat for the next several days. Image Unavailable, Please Login Image Unavailable, Please Login
Thanks Tom. I also plan to celebrate this evening by mowing the lawn. And it'll be hot but I want to get it done tonight instead of tomorrow morning.
Wife just noticed our neighbor doing his lawn in 100 degrees temps. That's crazy sauce! I mowed the backyard on Monday at 75 F, and it was sticky hot work. Wait until closer to sundown and drinks lots of water. It'll go on top of spaghetti with parmesan...T
Looks tasty. The lettuce wraps at PF Chang are one of the best appetizers we've tried at a chain restaurant...T
I'm trying to get back on eating less carbs, although I think I'm going to make quesadillas for lunch. I've gained almost 20 pounds during this quarantine. I've never made tacos from my own rub. Also added tomato paste from the pioneer woman's recipe. Its pretty good.
I did a little shop. Found a market with a meat department with what looks like very good steaks. I'll try them tomorrow. While out, I was hungry. Ended up at McDonalds, big mac combo. Now I'm full.
Never shop while hungry, Max. Mickey D's! A day late, we had traditional 4th of July hot dogs. Not sure how someone can eat 75. We had 2 each and I'm stuffed! T
Agreed, but I don't like rippers. https://en.wikipedia.org/wiki/Ripper_(food)#:~:text=Ripper%20is%20the%20slang%20term,burst%2C%20or%20%22rip%22. My aunt would grill/fry/microwave the dang things until they were all ripped up. Blech...T
I don't like rippers either. Butcher shop was out of T-bones. Bought a prime rib steak instead. They also make things like potato and macaroni salads in house, so got both as a side.
Red jalapeno dressing. I like the sound of that. Duck breast on the grill. When I really don't know what I am doing - more so than usual - I like using the Ranch Kettle, lots of real estate to move things around, to keep things from burning (too much). First, I cooked it about 3 min skin side down. Breast was scored, S&P. I used a CI griddle to catch as much of that melted duck fat. Saving it for future endeavors. Then 3 min meat side down. Then off to the side until an internal temp of 145 F. I think I overshot a little, it was closer to medium than medium rare. The orange liquid is a reduction of OJ, Canadian maple syrup and cinnamon. Basted the duck boobs with it....T T Image Unavailable, Please Login Image Unavailable, Please Login Image Unavailable, Please Login
The steak was pretty good, but the other butcher shop I go to is better. Going to get a T-bone for tonight. Going to try Atkins again, so just meat for awhile.

Two sauces. One was cilantro lime dressing mixed with Buffalo. The other was bbq sauce, soy sauce, chili garlic sauce and honey.
