    First meal back in US soil...a proper breakfast at a casual breakfast only diner. Good ‘ol american crispy bacon. Omelet stuffed fulla good things. Crispy cooked spiced potatoes. No cooked tomatoes or baked beans anywhere ;)

    We have been using kerrygold lately and I have to say it’s darn fine for mass produced butter. I didn’t used to give a damn about butter, but for some reason this kerrygold on some decent baguettes has been awesome.

    One of the very best breakfast items I've ever had is the Chilaquiles at Gallo Blanco in Phoenix. Worth a visit for the Chicken version, although if there are two of you, one person getting the veggie version is a good idea too (small pic at the bottom is the veggie)...

    Indeed.
    Few things in life are not improved by the addition of some humble bacon.
    And s'mores benefit from bacon more than you think you need, bc the marshmallow is a little overpowering.
    My GF and I thought we were very clever, coming to the same decision at the same time to make this very special breakfast sammie.
    A quick google search dispelled any notion of originality, unsurprisingly.
    It's nothing new, but I feel it does not get the attention it deserves.

    Eggs, veggie sausage on a fresh cooked tortilla. Topped with homemade pickled red onions & jalapeno slices.
    Wife said she bought some badd a$$ jalapeno seeds for the garden, and they were!
    Even pickled, those two little slices were muy piquante!
