Vegetable Medley....Mixed Vegetable Recipies?

    I know there's a food forum, however, I feel this will fit in better here as I know some of you are vegetarian, and/or eat right.

    For the last year I've been eating mostly lean cuisines for dinner (bad I know). Now that I'm living alone I feel it's easier for me to get motivated to cook more real food.

    I would like to know if any of you had a vegetable medley of sorts that can be eaten as my main meal at dinner. I would side this with a sweet potato.

    I did it this week, but I'm not happy with how it turned out. Although it smells great, the veggies I chose (fresh green beans, red bell pepper, ****take shrooms, zuchinni) just don't work well together.

    Hi, Jason

    Nothing special at all, but something I enjoy is just a mixture of steamed vegetables. Usually a potato, a few cubes of pumpkin, some brussel sprouts, a carrot, a little zucchini and just for a minute at the end some broccoli. It is simple but is OK for me.

    Sometimes I eat them uncooked. Brussel sprouts are good uncooked. And a carrot, some broccoli and cauliflower. Zuchinni is tasty too. I don't need many of these and it is enough. I find if I have these for a couple of nights I have MUCH more energy.

    I guess have whatever is in season & you like.

    I usually go outside once a week and grill red/yellow/orange peppers, zucchini, mushrooms, onions and asparagus to keep around for the week. Great to add into stuff or just to have as a salad with some olive oil. :)

    Yes, and like human vegetarians, their ****, farts and belches stink worse than omnivores.

    Don't laugh.... but try this:

    1/4 cup small dice carrot
    1/4 cup small dice white onion
    2 cups fresh spinach
    1/4 cup grated Parmesan
    ... if you like, maybe 1/4 cup very small broccoli florets

    In large pan sauté in veggies in olive oil until soft. Add fresh spinach, and allow to wilt down -- about 2 minutes. (A huge mound of spinach in the pan will quickly wilt down to almost nothing.)

    Remove from heat. Allow to cool slightly.

    Prepare a 2-cup portioning of Bisquick pancake mix. Add Parmesan to Bisquick batter and gently mix in. Add veggies to Bisquick batter and gently fold in.

    Use a small amount of olive oil on a large griddle to keep things moist. Prepare veggie pancakes, just like you would make breakfast cakes.

    Serve with a side of sour cream.


    We prepare these on our big outdoor grill because it has a large griddle side-car. Luca, who is quite picky, devours them.

    Seriously. They're fantastic, and can easily stand up to different veggie selections.

    Wax, I'm not giving up meat. I'm trying to cut down my body fat a little bit and I like to have a "lite" dinner.

    Daniel, not laughing at all. Not sure if I'll try the whole pancake thing right off the bat, but I like the recipe. Thanks!

    LOL, I just noticed that when you said it. I spelled it with 2-T's too.

    get a slow cooker or a crock pot. It's wonderful,

    throw whatever tubers/roots you have, onions, potatoes, carrots, random grains (barley, couscous, etc), salt, wait an hour, throw whatever greens you have. Wait half an hour, and you have a delicious, filling, healthy stew.
