The big Christmas Smoke

    This year due to covid, we are adjusting our plans at work and my typical method of cooking Brisket for the factory is changing. This year, we will cook/provide an entire BBQ meal for each employee to take home and enjoy with their family.

    For sides, we get food service pre-made pans of food that are actually really good, so that's the easy button.

    For the meat, I thought it would be interesting to share the journey of smoking almost 2000 pounds of meat next week at my home outdoor kitchen.

    Here's a picture of the smoker. At capacity, it can hold around 500 pounds at a time, so we will have 4 smokes over a week period to accomplish the goal. I've ordered a few new appliances to help along the way, so stay tuned.

    I've ordered 1000 pounds of Boston Butts, and the same of prime brisket, plus enough sauce and spice ingredients to include a bottle of my own custom hot and sweet sauce and Pineapple Habanero vinegar sauce for each box as well.

    Lol. THAT'S CRAZY!! Wow. I thought I was doing good with the Power Boil burner on our range, which puts out 20K BTUs. Jet engine indeed...T

    I think the kitchen island has a 2" gas line run to it.. Maybe it's only 1-1/2, I can't remember but it's a big line and regulator. I think the island is sized for 500,000 BTU if everything is running.

    Hey!! I want an outdoor kitchen like that. Could you post a few shots for ideas? I am ready to pull the trigger breaking ground if I can find anyone to do the work here in Calif. I want Wok station, steam ovens for bread, multiple duck billed burners for paella and large pans, etc, etc, etc.

    Here's a Christmas video we finished this week showing turkeys we cooked for Thanksgiving for local families in need.

    Well, tomorrow kicks off the BBQ week. We are cooking a ton of bbq, (literally), and my smoker only holds 500 pounds at a time, so dividing the project into 4 smokes over the next 10 days, taking off next Saturday/Sunday..

    Ordered in Briskets and Butts, and staging them inbound since my cooler can't easily hold it all at once and leave room for anything else.

    Here's the first 750 pounds.

    A great kind of secret is that Costco has a great deal on prime brisket. You might check it out at your local store if you haven't before. It's under $4 a pound for Prime!
