Recipe to salvage fish that has been hidden in freezer?

    Say you have somewhere close to 3 pounds of rather freezer burnt whiting filets. Not breaded or battered - just plain bonless fish filets.

    I absolutely HATE to waste food & figure there must be SOMETHING I can whip up that would make use of this fish & still be quite edible.

    First guesses are either in some form of stew or marinated in some fairly pungent herbs/spices for some kind of fish taco.

    Any brilliant ideas?

    Looking at flavor & texture, fatty fish like Salmon tend to degrade after a couple months; leaner fish can last up to six months. When you thaw it, if it's discolored or smells funny, consider that tossing the fish is usually less expensive than eating it and suffering the consequences...

    Assuming it's safe, there are a variety of options, most involve chunking the fish and using it for:

    Thai, Indian or Caribbean curries and similar dishes. There are a lot of varieties and choices re spices; you can also go to a hot and sweet profile (like Thai) with great results.

    Mexican or Central American seafood dishes. Usually hotter dishes with dry chili added to a tomato broth.

    Soups, especially the stronger Mexican or Thai varieties. For most of these, the fish is added just before the broth is done so it cooks quickly in the broth. Stick with clear broth soups or stews.

    Of course, it's important to think about the way the spices add flavor, and not conceal the taste, of the fish.
