    Did our TG turkey early. Oak smoked in a Weber bullet.

    Skin was a tad flabby, but that's par for the course in a smoker, and we don't eat the skin anyway.

    I tried that once (no lemon though) and the aluminum foil "turkey triangle" a la Alton Brown & jamming the cavity with aromatics, etc. but shifted to smoking then finishing up in oven at 250 F or so a few years ago and have had better results. Lower temps, less chance of drying the bird out without the hassle of brining. Oven finish mellows out the smoky flavor and gives me more heat control to dial in the final internal temp that I want. Of course, if crispy skin were a higher priority, other ways might work better...T
