Giant lobster?

    I was walking out of a steakhouse the other day and walked past their lobster tank by the front door. Inside that tank there was the biggest lobster that I have ever seen with my own eyes. I am guessing that this lobster must have been between 10-15 pounds. Does the flavor or texture of lobster meat change as the animal gets bigger? Is there an "ideal" size for lobster?

    I find that as they get bigger they also get less favorable. Personally, I buy 1 1/2 to 2 1/2 pound ones. A big problem with the very large ones, such as the 10+ pound one you saw is cooking it, as it won't fit in a typical cooking pot.

    I was always told as the lobster gets bigger the meat gets tougher.

    the biggest one ive eaten will like 5lbs. It was chewy. I perfer the smaller ones.

    I always wanted to have a taste test with lobster, scorpon and crayfish.

    Lobster has very little taste so I am guessing that the scorpion or crayfish would be an improvement.

    A dear friend is married to a great gal, whose family has lived on Cape Cod since the 1600's. They own a lobster pot that is so big it fits over all four burners, and they fill it with a garden hose through the window. She won't but a lobster over 2.5 lbs, so that's my guide as well.

    Anything over 5lbs needs to be started in cold water and gradually brought to a boil. If they toss a 15lb lobster into a boiling stockpot, the claw meat will be liquid and you could retread your tires with the tail meat.

    That lobster is probably older than anyone on this board. Kind of a shame, really.

    That's true. Bigger lobster need longer cooking time. The outside gets too rubbery IMO. Never tried raw lobster to see if meat consistency is a function of age ( size ) vs. cooking.

    Tomalley is one of my favorites.

    A friend of mine is a fishmonger and has yanked one of these big boys out of his tanks for me to see. He speculated the one I was shown to be about 70 years old. They are intended for show but ocassionally some glutton with an unlimited expense account will buy one to eat.

    I remember reading an article a few years ago about a seafood restaurant in New York City that had a giant lobster in one of their tanks that PETA was trying to "rescue." Apparently Rush Limbaugh caught wind of PETA's plan to rescue this lobster and went into the restaurant and offered the restaurant a lot more money for the lobster than what PETA offered for the crustacean, which in turn was sold to Limbaugh with a side of drawn butter and several halved lemons.

    I am in full support of PETA = People Eating Tasty Animals. I am also in full support of being a good steward of the environment and effectively managing fish and crustacean populations, harvesting the right size and quantity of animals for consumption. I can see the benefit of slot limits on lobsters and throwing some of these big guys with good genes back so that they can sire generations of little lobsters with good genes.

    I once ordered a 4.5lb lobster. It was pretty good but not as good as the 2-2.5lbs that I usually get at the same place.

    When I was in high school (70's) my part time job was in the New England seafood industry and we always had a few lobstas that were in the 27 to 30 lb range.
