I recently purchased a 2010 Ferrari 458 Italia and called the local dealership to obtain a build sheet on the car. Attached is what they sent me but it looks like a basic word document. I've never seen a build sheet before so my question is, is this what an actual build sheet looks like? If not, what should it look like?

Congrats on the 458, it is an amazing car. If you can register with the MyFerrari app (which can be a pain), you will get the full spec and (maybe) the three production photos of your car: https://my.ferrari.com/.

Any concerns on providing so much personal information to them? Do you get bombarded with solicitations or anything like that?

Not so far I bought my 458 Spider CPO and went through the registration process in 2017. When we ordered my wife's Portofino M the dealer setup her account for us. The MyFerrari app / website will show you the services you have done and (hopefully) give you the owner's manual in PDF.

Rob, thx for the registration idea, I had not heard of this before your post. Registering wasn't much of a hassle, and now I can see a complete list of my car's options, my last service is noted, and that all past recall campaigns are completed.
