these were much much better - so not sure of the exact cure because I tried three variants -
better , non grocery store fish sauce - suspect...
That rice flour sure does make a mess of my fryer :(

Wow that’s amazing - my wife did one for me in 2013 but it’s not near as detailed ..
After 18 hours Took them out of marinade and rinsed and out back in cooler until later today ..

Yeah, sucks some of the greats are gone.. K-Pauls was probably my favorite New Orleans spot and it's closed it's doors too.
