How did you end up cooking and mopping them? Beef ribs are not my super favorite. They're a little too fatty and unctuous to eat very often. T
Well, I kinda ****ed it up, but not really. I opened another can of enchilada sauce and was going to mix in some of the marinade, but I forgot that second step. So it didn't get cooked in, but I added some spices to the second can while cooking it. It's just ribs in general, these had just as much meat as pork ribs. I just don't think that taste is all that great, and the little amount of meat makes it a poor choice for my liking.
I might skip dinner. Just had a pepperoni calzone for late lunch (2:30pm). I'm too full to think about eating dinner.

We had grilled NY's, salad, and French fries for the others. Did it at out VRBO house my sister rented. Its a nice house in a little gated development in Mesa. There's a food truck park right down the road that we are gonna try one night this week. Looks like about 4-6 trucks on weeknights and a dozen or more on Fri-Sat nights.
No midnight snacks...... Fell asleep early on the couch watching The Sopranos. Tonight I'll eat the ribs, brother still made them yesterday. Having sushi for lunch at my favorite Japanese restaurant here. I'm going to eat light.

The Japanese restaurant was too busy. Ended up getting fish and chips. Halibut with 4 fried oysters and shrimp. Still full from lunch, so I skipped dinner and plan on getting an Oreo Cookie blizzard as a late night snack.
Its no dine in unless they have a patio here. Their patio was packed. Most restaurants with a patio here are packed. I think there is a capacity cap as well. I wasn't going to wait 45 minutes for a table. Normally a wait for a table there though.
2nd to last night in Scottsdale was at Dominick's Steakhouse (the venture by the Mastro's after they sold their namesake chain). To start: Giant "shrimp" cocktail with "Atomic" horseradish (and they were not joking...waaay hotter than any I've ever had) Main: NYC strip with some sauteed corn and truffle/parm fries. LOL. It was good! Just the right amount of heat. Interestingly enough, the heat mellowed out a bit while it was reducing on the stove top. When I first blitzed it, I was hacking and eyes tearing. After I reduced it to about one-third, it was still zippy but not crazy hot. You still in AZ? T
That squid reminds me of a dish the wife and I had in Venice, right off St Marks Square. Magic! Save travels home...T

Hard to get perspective on that shrimp pick, but nothing shrimp-y about those. Looks like you've moved from shrimp into the prawn realm! T
