I'm trying to make some Vietnamese chicken wings... inspired by a restaurant Pok Pok - Anyone had them? Looks like the restaurant didn't survive Covid but appears to have had several locations over a 10 year run.. I'm in batch 2 - first one was too salty... Trying again today with marinade and will post some pictures tomorrow. Marinade consists of strained fresh garlic, salt, fish sauce and sugar.

chop a bunch of peeled cloves in salt and place in warm water for 10 minutes or so and muddle around .. then strain only the water into the marinade - discarding the garlic mash as it would burn in the next step of frying the wings .
Upon reading your first post I googled and that video popped up too. Too much sugar in that dish , but otherwise looks great. You sure have posted some good eats. Good luck cooking , I'll be looking for your posts.

Man, that came out great. I love this idea. There is a restaurant in Houston that does spicy Korean wings like that. They do a kimchee smothered french fries too that is pretty cool. Great stuff. Yours look awesome.
Looks awesome. But I have to say...if that very, very popular restaurant could not survive covid...yikes.
Yeah, sucks some of the greats are gone.. K-Pauls was probably my favorite New Orleans spot and it's closed it's doors too.
