    Major respect having done maybe half of that journey - Memphis to NYC - many times with my wife and lovely co-pilot. Virginia is a total drag. Tennessee seems like it'll never end. We started going via Kentucky, West Virginia, etc. just to do something different. Stay safe out there on the road.

    As I wrenched my left calf up a good one 48 hrs. ago, last thing in the world I need to do at home is expend energy.

    Impulse Purchased a 10 lb. Pork Shoulder, coated with mustard, seasoned with bits of 5 different mixes & into oven for 6 hrs. at 325 & 20 min. at 400 - Really Lazy
    has-no-right-to-be-that Tender Pulled Pork with Collards & Bread. Aaaah . . . I feel no pain.

    4hrs in dutch oven @275 degrees, after searing in same pot until browned on all sides for ~10min total. Carrots, onion, garlic, celery, 2cups red wine, 2 cups beef broth, bada-bing.

    How do you make your collards? They're about the only "green" I have not yet come to terms with yet...T

    These were straight out of a can. "Glory" is a good brand. Picky eater Son likes 'em so much, he bought 5.

    I'm forbidden from making them from scratch. Takes too long to cook and to get rid of smell.

    Boneless chicken cutlets, sautéed in butter, lemon, shallots and Marsala wine, touch of brown sugar and carrots. My go-to when comfort food is needed.

    Dessert is Meyer lemon cookies!! The dough has Meyer lemon juice and the filling is cream cheese, sugar, Meyer lemon juice, and a little lemon oil. Firing up a decaf espresso (alas, I can't do a full octane double this late in the day any more ☹️). Meyer lemons courtesy of our very own @NbyNW
