    In central Washington State being agriculture based economy, they have a massive Mexican population. Wish I was there because several grocery stores make tortilla's in house. Here its prepackaged and not as good.

    I think they're only acceptable because my friend in Seattle always has his parents and anyone visiting bring tortillas made by our local grocery store here.

    Once I leave Texas and the southwest, including California, no Tex Mex for me. The few times I've tried it, has been disappointing. What really surprises me, is that anyone goes to chain Tex Mex around here. You can go into any random mom and pop bodega and get a meal that is 2x better and 2x cheaper than Taco Bell, Del Taco, etc.

    BTW, Jason, your should tell your friend in Seattle to check out the uncooked tortillas at Costco. They're not bad. Not the greatest, but hot off the comal more than makes up for it.

    Speaking of friends, our best friends are pescatarians, so I'm developing my seafood ramen skills. Tonight was try # 1.

    Bok choy, ginger and garlic. Sautéed. Once a little softened and browned add about 5 cups of water. Add some crushed dried shiitake mushrooms for umami. Fake crab, which in our case is white fish. Cayenne pepper. Black pepper. Simmer.

    Open and break apart ramen noodles, put into a bowl. Discard seasoning packet. Pour about 2 cups of broth from above over the noodles. Let it soak for a while.

    Once the noodles are soft. Chuck in some Tabasco (sambal oeleck would have been better), soy sauce or whatever you want. Eat.

    Stuff looks good tom.

    I believe he does one better and started just making his own.

    I will say popping the HEB tortillas in the freezer until you need them works quite well. It surprised me.

    I have Mexican friends that make their own. They are awesome. But with the border closure I'm stuck with what I bought.

    Tonight is ribs with potato salad.

    Fake crab, the horror!!!!!!!!!!!!! Growing up on a beach, I had my own crab traps. Get fresh crabs most of the summer. Can't eat the fake crab stuff, even though its made from white fish.

    We used to go crabbing in Brooklyn. Sheepshead Bay. We'd go to the store a day or so before, buy chicken legs, leave them out to ripen them up, use that as bait. Love fresh crabs.

    Id catch a rock cod like fish and cook the meat for myself. Id use the innards, head and tails as crab bait. I also salmon fished.

    So...attempt number 2 with the smoker was a total fail. This chicken was disgusting...I won’t go into details here...it did, otoh, look pretty good (but experienced eyes will see the problem right away). Back to the drawing board...

    Sorry forgot to take a pic of my son’s plate. Made linguini with red clam sauce. I only ate a ladle of sauce (no linguini) some auricchio and a big salad.

    ps please note the mixing bowl- a reminder to toss your pasta with sauce

    I didn't feel like cooking last night, nor driving. So I got Pizza Hut delivered. They have a buy one pizza at regular price and get meds at $5 each. Got a meat lovers for me and a Supreme for my dad. Doing the Kirkland Angus beef burgers tonight. My dads gone home. Two weeks went by fast.

    Summer corn looks awesome. I thought we would have good corn this year given the relatively cool summer.

    I did chicken leg/thigh battle round 2 last night on the pellet smoker. Took off the skin and just cooked it straight thru at 350F. Much better :)

    glad the pup is feeling better.

    I’m with you on top sirloin. I’ve never found it all that enjoyable. I actually had my first top sirloin in decades recently (I wanted the Oscar style at the restaurant and it was the only steak they do that with..their ribeyes had been good on prior visits so I trusted them). Meh, too lean and not easy to cut nor tender.

    So I’m off top sirloin for the next few decades again...

    I made a Costco run (200 miles round trip) to load up for guys week this coming week. Planning prime grade rib caps, a repeat of the smoked giant ribeyes and a side-by-side of some local raised filets vs Costco prime filets. Oh and my first beer butt chickens with some local sourced chickens.

    (look how cheap the Costco prime beef is at the idaho falls store - although they did raise it $2 per pound from the week before. I still can’t believe they strip off the rib cap and then sell the “eye” only labeled as “ribeye”. Some sucker’s gonna buy that and wonder where the rest of their ribeye is! I say that fully acknowledging that I was that sucker once or twice!)
