You've discovered the wonderfulness that is a pan seared steak. IMO, it's really the best way.

Add some butter to baste it next time.;)

From night before last. Brisket ramen!! Boil up leftover sliced brisket until warmed through. Cayenne powder added to the water. Remove the meat after a few minutes. Chuck ramen noodles in and stir. Wait a few minutes until the noodles are soft. Add meat back in. Hit it with a generous portion of your favorite hot sauce (I used Tabasco original). Dig in!

Chili dogs. Hebrew National dogs. Boil in a little water for a few minutes, then finish off on the grill. Added some homemade smoked chuck roast chili, a little bit sauce, a bit of hot sauce. Toasted bun. Stuffed.

Yes. Butter halfway through a couple-three cloves of garlic and 3 or so twigs of thyme.

Then u can flambé some cognac, toss in some cream & pepper the **** out of it for a sauce while the steaks are out of the pan & resting.

I cook all my steaks/burgers/fajitas on cast iron.

Gonna have to go back and read some of the pertinent posts on this topic, and try this butter basting deal once the weather cools off. For me, it's hard to beat steaks on the grill...T

I did the Chinese combo for one. Sweet and sour pork (what I was craving) and fried rice. The restaurants dinner for six is better, but only had two people this time.

Tonight think I'll get another T-bone.................

For one? You kick pops out of the house?!? ;)

Did burgers for dinner, no pics, but I have discovered an excellent new topping option for burgers, French's crispy fried onions!
Yep, the things you pile on top of green bean casserole during the holiday season. Nice crunch, a little salty, a little sweet, went well with some goat cheese on my burger, and a splash of homemade hot sauce...T

I actually haven't been that happy with any online provider.

That guy was a Poussin from D'Artagnan.

I'm going to try local farmers next.

I did T-bones again last night. Tonight, I don't feel like going out. Decided to do Kirkland Angus beef frozen hamburger patties.

Can you post the recipe for the protein bars? That sounds and looks good. A nice change of pace from my cliff bars.

Finished over a hot gas grill. 1.5" per side w/ a twist & a flip for some cross-hatching.
    Served wth brown rice and a new invention, cucuzza lasagna. Peel and slice a cucuzza, thinly;
cut into rounds. Place in a casserole dish. Intersperse tomato sauce and mozz, like you would a lasagna.
Would have been better with more mozz, and maybe breadcrumbs to top it off, but corona virus
pandemic = no last minute trips to Kroger in the Cali.

OK, I got to ask, what exactly is auricchio? My Googling suggests some sort of provolone?

Auricchio is a non smoked, sharp provolone from Italy. I usually buy 4-5 lb chunks at a time.

They actually make a licensed Auricchio Americano here that is carried by some Sam’s club, which is a little bit more sharp. Sadly my local Sam’s club no longer carries it.

If anyone’s Sam’s Club has it please PM me as I’d love to stock up on some.

Sure, here you go, it's a bastardized recipe from various sources and I tweak it each time. Modify / substitute at will.
I mix it for a few minutes using our Kitchen Aid mixer then dump/spread on a baking pan. 350 for ~30 min. It's kind of crumbly but great for a snack. Low salt, low sugar (I think).
    • Eggs, usually 4
    • Rolled oats, 4 cups (full box of Silver Pallet thick and rough oatmeal)
    • Seeds unsalted: sunflower and pumpkin seeds (Go Raw brand at Wegmans), 1 cup
    • Almonds and walnuts, 1 cup each
    • Shredded coconut, 1 cup
    • Peanut and almond butter, 1 cup each
    • Agave nectar, if not using honey
    • Honey, 1 cup
    • Vanilla protein powder, 1 cup or more
    • Vegetable oil to blend together in mixer, usually 1/2 to 3/4 cup
    ###
    • Brown sugar, 1/4 cup (I skip this)
    • Sucanat raw sugar, 1/4 cup (I skip this)
    • Cinnamon, tsp (I skip this)
    • Sea salt, tsp (I skip this)
    • Greek yogurt plain, 1 cup (I skip this)
    • Maple syrup, 6 tablespoons (I skip this)
    • Vanilla extract, tsp (I skip this, protein powder is vanilla)
    • Chocolate/dark chocolate chips, 1 cup (I skip this)

Did a bacon cheeseburger last night from a place called White Spot. Tonight I'm making homemade beef tacos.
