    good piece of venison like filets or tenderloin? I cook those like a steak rare to medium/rare. you can wrap in bacon as venison pretty lean. just don't make the common mistake overcooking game meat.

    you can see what I'm doing with my venison later tonight, I believe my "stripper poles" are the only thing I do that will beat ANYONES. they are common Texas thing especially dove season, but I do a couple things I think sets them apart.

    you’ll see, just a drunken name given 20 years ago. :). any meat, the secret cheese filling, in a jalapeño wrapped by bacon with a toothpick (pole) holding it together. Got the name for stick and how good it is. :D

    here is my <meat> on a stripper pole:

    this time Venison. birds like Dove work great because they cook same pace as bacon.

    -halved Jalapeños scrapped out to hotness you desire.
    -secret sauce is a fruit cream cheese, cheddar cheese, and salsa.
    -put sauce in Jalapeño, place meat, wrap in bacon, and then tie up with toothpick.
    -dip in fruit cream cheese and salsa.

    I frequently do jalapeno or habanero poppers with chive, whatever cheeses. I'll have to stick the meat to the strippers and eat'em too...sorry couldn't resist. ;-)

    Ya know, as long as I scrape out the seads and pith, there not too hot. Some hotter than others but I gotta watch it for the next morning...:-(

    For some reason, finding my favorite pizza dough - Wewalka - has become a major pain in the neck since corona. So, we tried an experiment last night, and used these uncooked tortillas the wife buys at Costco as the base for mini pizzas.

    Sauce was a tomato, cucuzza and garlic semi -homemade affair. Mozz. Basil and oregano from the garden. Sprinkle of fresh cracked black pepper and garlic powder.

    For some reason, finding my favorite pizza dough - Wewalka - has become a major pain in the neck since corona. So, we tried an experiment last night, and used these uncooked tortillas the wife buys at Costco as the base for mini pizzas.

    Followed up on an earlier suggestion and made linzer cookies.

    although with a good bit less butter than suggested, and I used sucralose since I try to keep carbs down on my early afternoon coffee and dolce break. The filling is no-sugar added strawberry jam.

    I buy the tortillas at Costco. I've made mini pizza's with them. Turned out good.

    Firing up the deep fryer for the left over Chinese. Have several fried items, almond chicken, egg rolls and deep fried shrimp. Its better heated in the fryer.

    On the BBQ circuit, we cooked a similar dish called Armadillo Eggs.

    1pound pork sausage (I use the spicy kind)
    12 slices bacon
    6 jalapenos (stems, core, and seeds removed)
    4 oz cream cheese (softened)
    4 oz cheddar cheese (shredded)
    2 Tablespoons Powerpig Rub
    1 cup Powerpig BBQ sauce

    In a medium bowl, combine the cream cheese, cheddar cheese, and 1 Tablespoon of the BBQ rub.
    Spoon some of the cream cheese mixture into each of the cored and seeded jalapenos. Use the back of the spoon to press the filling all of the way into the jalapeno.
    Wrap each jalapeno with 1/6th of the pork sausage. Use your hands to ensure the sausage is covering the entire jalapeno and roll back and forth into an egg shape.
    Wrap each sausage covered jalapeno with bacon. It will likely take two pieces per armadillo egg. Secure with toothpicks, if needed.
    Place the bacon wrapped armadillo eggs on the smoker over indirect heat and close the lid. Smoke until the internal temperature reads 165 degrees F. This usually takes around 2 hours, depending on the size of your armadillo eggs.
    *I like using Cherry Wood for the smoke

    very cool! almost exact to my recipe, I do use Meat Church Honey BBQ rub, but use that with about everything. the fruit cream cheese adds a nice sweet contrasting flavor. old days you could easily find pineapple cream cheese, last several years the best I can do is usually strawberry.
