    I've heard of letting salt sit for a while to draw up moisture. Any ideas as to how long and how much? Do you trim off the salt before cooking? I don't like a lot of salt on meat.

    Glad to see you're still enjoying the rub recipe. I had to quit selling the rub and BBQ Sauce a while back as I was working full time and traveling quite a bit and couldn't keep up with orders.

    For those that haven't heard, I was laid off a while back and pursued my dream of a full time food business. We have two carts and specialize in Wild Game and Exotic Sausages and Burgers. The recent Smoked Kangaroo-Boar Meatloaf did OK. The Smoked Elk-Boar Meatloaf sells out every time we have it.

    Our claim to fame is our house made mustards. Here's a sample of what we have:

    Hot and Sweet Blueberry

    Black Cherry Bourbon

    Peach Pecan Whisky

    Tequila Lime

    Garlic Parmesan

    Cheech and Chong...made with Red Wine Vinegar and Organic Hemp Oil

    Here's my steak secret : heat grill up to 700 degrees - make sure flame deflectors on grill don't prohibit good flame ups - season room temp steaks as you wish and pour room temp melted butter over them in a pan or bowl- probably 2 sticks but could be 4 - (based on how many steaks)- rotate them with tongs in the bowl to coat them -and place on the hot hot grill- a few min each side and re- dip in butter bowl as you flip them - if steaks are thick enough you can flip twice to get cross marks - everyone loves the result and hide the butter from any health freak friends :) ( it burns off !)

    1.5oz ground black pepper
    2oz cayenne pepper
    1oz garlic powder
    1oz chili powder
    1oz grains of paradise
    32oz light brown sugar
    OPTIONAL 1oz MSG
    Mix well and enjoy!
