    We “made” my favorite Polish soup - Zurek - at home for the first time. Well, by “made” I mean we used store bought fermented rye flour broth, and added the traditional marjoram, white sausage and a hard boiled egg. Yummy and strange taste. Not as good as her mom’s fully homemade version (her parents ferment the rye flour in the basement - I suggest not seeing or smelling that before eating the soup!)

    Down 80#, off insulin and I can probably drop the metformin and do it on just diet & exercise. All in one year.

    It’s been easy for me as I used to get fat for bikini season and get in shape for hunting season. Always did Adkins going back to the 80s so the transition has been easy.

    I’ve always eaten big salads going back to my childhood. They’re a filler. But with good olive oil and my own vinegar a treat.

    I’ve gotten over missing things- it is more like “it would be nice to have” one bite of pasta or eat one French fry, but I don’t. It’s just poison for me so I get over it. When I cook pasta for my family I bite into it and spit out the bite I try for doneness.

    The biggest thing is that I am on my treadmill every day and rearrange my schedule for treadmill time. I don’t take any days off willingly. If I am physically able to do so I’m on it.

    Congratulations again. Awesome news.

    Sugar here has been easy to basically eliminate. We're good at knocking back salt too. Carbs... still working to reduce them even more. Unfortunately they're a big staple go-to for cooking by my wife. Pasta and potatoes mainly. I politely remind her less is better. She knows but old habits. And she's never baked bread, but she's picked up making some during this lockdown. All in moderation is what we're working on.

    I'm still big on 0% Greek yogurt and lots of berries. And the protein bars I make. Hard boiled eggs too. Lots of beef, pork, and veggies. Love big salads also - oil and vinegar is best with fresh black pepper.

    Leftover Chinese food. I'm going to grab more steaks tomorrow at the grocery store, they are on sale. Canada's holiday is today, so decent sales on grilling items.

    Nothing says "summer is here" than a fresh Caprese Flat Bread with fresh tomatoes and basil from the garden seasoned with a little salt and pepper, whole-wheat flat bread, fresh "gooey" mozzarella - brush flat bread with olive oil, grill over flame for 1-2 minutes, flip, brush the back side, cover with all the goodies, and grill again for 1-2 minutes until the cheese just starts melting ... slice and serve hot!

    Couldn't be simpler - yum!

    Fantastic. You have tomatoes in the garden already? We just got our first flowers on the tomato plants a few days ago. Our basil plant is a runt. Gotta be the covid19, because usually it grows like a weed at this time of the year...T

    Tonight was our favorite "old standby"...the risotto with mint, peas, lemon zest and scallops. Yummy as always.

    Its actually warm out in London, so we had dinner on the terrace. A few hot days here expected in our last couple of weeks before the great escape...
