Slight hangover this morning that I didn't expect since I can usually tell that'll happen the night before, but slept like crap. So I needed something filling. Hit up chipotle. Filling and I make two meals out of it. Half steak half barbacoa.

I was being generous. To be honest, I don;t understand why in this state, with a million mom&pop Mexican restaurants, anyone would go to Chipotle, or better yet, Taco Bell!

It's quick and tasty and if I get tex mex I prefer to eat in. It's never as good taken home.

I made a huge batch of the beef/potato taco filling last night (see dinner thread), so I had it for Breakfast with eggs (see breakfast thread) and now as a salad topper for lunch.

The never-ending beef/potato taco filling was the centerpiece of yet another meal. Lunch today was another salad.

(Believe it or not there is enough left for one more dinner tonight which will be tacos...)

I "think" a lb of beef, but I didn't check, so maybe it was a kilo :)

Added one large potato. It filled a medium skillet.

Ania isn't eating anything, so I've been the only one eating it. Plus I'm so beat/tired, that cooking once and having 4-5 meals out of the one pan has been a blessing.

See, I'm sure your HS science teacher told you that knowing the metric system would come in useful some day.

Thanks. Ever try boquerones? White anchovies in garlic infused olive oil/vinegar? Those are great in salads...T

I’ve not lately...(have had tinned anchovies before but probably not garlic), but I'll be looking for them. Thanks for the tip!
