Had a bit of leftover hollandaise sauce from last night's dinner, so we made improvised "eggs benedict" this morning (just used what we had in the fridge). Toasted baguette topped with some prosciutto and spinach leaves, then a poached egg and some of the re-heated hollandaise and chives. Tasted good, but *of course* the hollandaise broke even with literally only 5 seconds in the microwave. (we tried letting it come to temp in the sun/room temp, but it was still thick/butter-like consistency when the time came to serve, so into the microwave for 5 seconds and it still broke). Oh well, still was a yummy breakfast. Had another french press carafe of the "poop coffee" we bought in Morocco. Still "meh" (although we have certainly gotten it thick/strong enough now).
