    16 days in October,
Eight days: Rome, Pisa, Florence, Verona, Venice, Ravenna, Ancona, then a boat down to Athens for eight more days.
I am tied to my G/F, and her sister, and her B-I-L, who all I am sure will not want to go to some of the
    places I want to go.
It's a tour group so we are not renting a car, but is there anyplace car-related I can go to with the
above destinations, or am I screwed?

This was years ago, but it seems like there was a Ferrari dealer outside Venice that might have been within walking (or certainly bus) distance from the classic tourist canal attractions there. Locals might want to chime in on this location or other cities that may coincide with easy access to tourist attractions.

Yea, I'm afraid you are SOL. Unless you are going to a place beginning with "M" (Modena, Maranello, Milan) I can't think of anything where you're going to be in October. In May you would have been close to Brescia (Mille Miglia) when in Verona.

That's kinda what I was afraid of, so I guess I will just go for the sights, the architecture, and
probably run into some retail stores that sell marque stuff.

Brescia has the Mille Miglia Museum, which has a nice display of cars and interesting artifacts relating to the race. When I went a few years ago, it also had a small collection of Beatles memorabilia displayed in the basement (!) http://www.museomillemiglia.it/en/ Its about an hour from Verona and an easy drive or train & taxi ride.

Outside Florence you can rent a classic convertible and drive in the countryside. I'd recommend not driving in the urban areas due to traffic. http://www.happyrent.com/en/vintage-car-rental-old-car-rental-italy/car-rental-florence-siena-tuscany.html

I haven't done these tours but a friend raved about her trip.

You're quite lucky to be bored by the prospect of your itinerary! :)

Oh no, i won't be bored, I just have to switch mindsets, and it's not like I was going to
spend all my time doing just 'car stuff', I will be fine and I will love it.

May I suggest the Museo Nicolis in Villafraca di Verona?

Really worth a visit. Lots of Maseratis, some Ferraris (when I was there they also had an FXX), lots of other cars, motorcycles, bicycles, etc.
The guy virtually collected everything he saw.
